Making Nettle Soup


3 tbsp butter

1 medium white or yellow onion finely chopped

1 Garlic clove minced

2 cups chopped young nettle leaves

1 organic chicken or veggie bouillon cube

3 lightly cooked potatoes

Melt butter in a medium saucepan over medium heat. Add onions cook until caramelized. Add garlic. Then add lightly cooked potatoes, the bouillon and water to cover. Lastly add nettle leaves and cook until tender. Bring to a boil, then lower heat to a simmer. Cook for 3 minutes. Add salt, pepper or nutmeg to taste. Let simmer for 4 more minutes. Makes 4 servings.
