Gooseberry leather
Gooseberry Fruit Leather
Harvest 4 cups of wild Gooseberries. You only need 1 cup of water and 1/2 cup of honey.
Combine all 3 ingredients in a large pot. Bring to a boil. Reduce heat and simmer for 10 minutes. Pour into a blender and puree. Then place wax paper over a cookie sheet and spread the puree out in 1/4 in thickness on the sheet.
Heat oven to 200 degrees and cook for 4 to 6 hours. Once the spread becomes leathery, store in a sealed container for up to 2 weeks.
Makes 24 cut pieces.
